Description:
Located at the highest altitude of the Camphor Lake tea plantation in Alishan, this place is surrounded by a beautiful old grown forest. This kind of environment provides cool temperatures, with clouds and fog being present all year round, provinding a weak sunlight intensity.
Those conditions make the respiration of tea trees to slow down, and the synthesis rate of the compounds that contribute to the bitterness and astringency in tea is consequently reduced.
When you drink this tea, you can imagine this beautiful environment, feel its freshness, smoothness, and its sweet aftertaste.
Preparation:
4g (0.14oz) of leaves per serving
100ml of water at 95-98°C (203-208°F) per serving
First brew: 60 seconds
Subsequent brews: 60-90 seconds
Cold brew: 10g of leaves for 1L of cold water. Brew for 12-15 hours in the fridge at 5°C. Filter the liquor in another bottle and keep it in the fridge. You may re-brew the spent leaves a second time as you like.
