Long time ago, Japanese green tea was made using the pan-firing method until the steaming process became popular (ca. 1738) and Sencha became the norm. Pan-fired green teas are characterized by mild nutty and roasted flavours. The taste is light, refreshing and low in astringency. This Gokase Pan-fired Green Tea is hand-picked and made from Nagomi Yutaka cultivar (meaning peaceful and rich), used for high quality teas.
Preparation:
4g (0.14oz) of leaves per serving
80ml of water at 80°C (176°F) per serving
First brew: 60 seconds
Subsequent brews: about 15 seconds
Cold brew: 10g of leaves for 1L of cold water. Brew for 12-15 hours in the fridge at 5°C. Filter the infusion in another bottle and keep it in the fridge. You may re-brew the spent leaves a second time as you like.
