Wazuka is located east of Uji and is most famous for producing the finest matcha of Japan. It has about 300 farms that produce about 40% of the Uji tea. More than half of the tea produced in Wazuka is tencha/matcha.
Description:
This is a product is the top grade signature product made by Nakai organic tea garden. Coming from Oku Midori cultivar, the plantation is indirectly shaded using "tana", carefully collected, steamed, dried in the tencha oven, sorted and aged for 6 months before being ground by stone mill. Light, no bitterness and long aftertaste, unique in our collection.
The matcha is packed in a sealed can and with an oxygen absorber pad.

Preparation:
Use 3 scoops of "chashaku" spatula (3g - 0.10 oz) of matcha powder in a matcha bowl "chawan". We recommend to sift the powder to avoid the formation of lumps.
Prepare 120ml of water at 80°C (176°F)
Pour 10-15ml and mix with the whisk to obtain a regular paste
Pour the rest of the warm water
Whisk (preferably with a bamboo whisk "chasen") until the obtention of a homogen foam
For a cold preparation, follow the same procedure as above but use cold or room temperature water instead. Note that using cold water may make it more refreshing but also more difficult to foam.
